Wholemeal spelt flour is ground from the ancient spelt grain, highly sought after for its low gluten content and wonderful nutty flavour. The grain is husked before being stoneground with nothing lost. Slater farms spelt is grown biodynamically using a 3-year field rotation. Spelt more expensive than wheat because it is lower yielding and has a longer growing season. All of which is worth the effort once you taste it!
