Like a Brie, our washed rind starts life as a Camembert but things take a laborious turn from there. We hand wash every single cheese every second day for a fortnight, using a special bacterial solution. This actually eats the white mould and converts it, causing the cheese to break down and get lovely and gooey. The outside gets rather ripe and pungent.

Artisan Selection Cheeses
Artisan Cheese head cheese maker Michael Reeve has been refining the process for over 20 years now. Mike grew up in the UK and started at the bottom, packing cheese before working his way up in the industry. Along the way Mike's hard work was recognised when he won the World's Best Traditional Cheddar award among many others. Also notable, Mike has appeared in a commercial with world renowned Chef Heston Blumenthal and has had Prince Charles eat his cheese.Mike's work is so admired, he also makes cheeses for other cheesemakers!
All the cheeses are made at Mike's Mt Tamborine Cheesery from milk sourced from Scenic Rim Dairy.
