Under the Mistletoe- spiced Christmas fruit

About the maker: Ej Daniel cooked for the aristocracy in Scotland for many years and it was here where she fell further in love with fruit cake. For her it is an ever evolving exploration of ingredients and method. Using fragments of her Nana's recipe and improving it every year with her own experience. Her Nana used to store a jar of "Christmas fruit" all year round, taking what she needed for the cake each year and refilling the jar. Whilst her Nana used "plonk" Ej uses whisky, paying tribute to Scotland. She got rid of sultanas and glacé cherries altogether preferring a mix of cranberries, cherries, raisins, currants and blueberries. She grinds her spices by hand, because you can tell the difference and has developed her own special blend of Arabian spices, which she calls "gunpowder spices". Every year she makes big batches of her soaked fruit, blending the vine fruits and berries with the spices and then filling up her glass Le Parfait jars and pouring over Famous Grouse until it reaches the top! Then, away they go into the cellar for at least a year or longer. This year's vintage of" "Under the Mistletoe" is from March 2016 and has mellowed and matured beautifully. Ej named her soaked fruit "Under the Mistletoe" because it really is where magic happens! Cracking the lid on one of these really will ignite unadulterated pleasure and weave joy into your soul. You can use it to make your own Christmas cake, fruit mince pies, delux cheese toasties, or stir it through melted dark chocolate for a seriously special rum and raisin, swirl it through softened ice cream and re=freeze for an Aussie Christmas Cake, or even bliss balls!
