In my family no one likes zucchini, so I had to get creative. This is a modified recipe from an old favourite cookbook. Even though the recipe sounds bland, the resulting pancakes are very tasty (much to the surprise of everyone!!).

Savoury Zucchini Pancakes
Ingredients:
- 2.5 cups grated zucchini
- 1 grated onion
- 1 egg
- 1/4 teaspoon freshly ground black pepper
- 1/4 teaspoon salt
- 1/2 cup wholemeal flour
- 1 clove garlic
- 2-3 tablespoons oil for frying
Method:
1. Wash but do not peel zucchini and grate. Combine in a bowl with onion, beaten egg, seasonings. Stir in flour.
2. In heavy frying pan heat enough oil to film the base of pan, add sliced clove of garlic and saute unitl golden brown. Remove garlic.
3. Spoon generous amounts of mixture into pan and flatten out mixutre to form a well shaped pancake about 10cm across.
4. Fry on both sides until golden brown and lift onto paper towel. Best served hot.
