Hi guys,
Since you are requesting recipes, thought you might be interested in this one. I came up with it one night when pondering what to do with the dill from the Food Connect box. The weekly surprises in the fruit and vege box have certainly encouraged me to become more creative in the kitchen, leading to a regular ritual whereby Jonathan has to guess the secret ingredient in the evening meal! Beats buying the same tired old veggies from the supermarket.
Cheers,
Nicole and Jonathan Clarke
Dill Dressing
Ingredients:
- 250g cream cheese
- avocado
- bunch of dill, leaves finely chopped
- juice of one lemon or lime (kaffir lime works well too)
- cracked pepper
- pinch of salt
Method:
1. Puree cream cheese, avocado and dill, until dill is very finely blended through.
2. Add cracked pepper, juice of lemon/lime and a pinch of salt. This dressing is delicious piled on boiled, steamed or roast potatoes. It’s also tasty on Paul’s meats!
